Capture Bnc Rca

What is best way to import video into my MAC at high resolution & what format?

I just received a library of production work I worked on years ago. It is on 3/4" U-Matic and I have a working U-Matic player. I can connect the U-Matic to my mac via a BNC/RCA to USB/Firewire converter.

My two questions:
1. Do I use iMovie to capture the video or should I purchase Final Cut? Or some other system for importation?

2. What format should I capture? I believe I can capture h264 or flv but would like to make sure I capture at highest res possible.

I will be archiving the material - on a 1TB disk, with DVD backups and possibly a copy on DV tape.

Any information would be appreciated. Thanks!

1. iMovie is enough.
2. H.264, if the resolution is too low, try to change it to another resolution with Mac total video converter: http://www.mac-videoconverter.com/
